Bled is famous for two things. The lake and the cake.” As Chris’ friend Mindi so cleverly pointed out. 

There’s a whole lot of Slovenian cuisine that’s worth your while trying, but Bled’s cream cake is one thing that you’ll regret not tasting while you’re here. 

So here’s some backstory into how blejska kremšnita (pronounced BLEY-skah KREM-shnee-tah, in case you want to try that out for yourself) became one of the reasons people visit Bled.

Where It All Began: Bled in the 1950s

Post WW2, Bled quickly became a getaway spot for anyone wanting to bask in the beauty of Central Europe. People came for the lake, the mountains, and that almost-unreal fairytale setting. 

Even now, when you visit and see the historic castle and see the little island in the middle of the stunning glacial lake, it’s so easy to see why this town would be a fan favourite. 

So, hotels didn’t need to attract the tourists, they simply needed to offer hospitable rooms, good meals, and a memorable experience, to keep them happy and returning. Hotel Park exceeded those expectations, though, when their pastry chef at the time took a custard and cream cake recipe from his previous home town, and perfected it into a dessert that would turn into a town icon. 

The Chef Who Created Bled’s Famous Dessert

Most of what we know about Ištvan Lukačević is that he worked at Hotel Park in Bled in 1953, and he perfected the cream cake that everyone so loves today. Even when you Google his name, the first things that come up are all about the cake. 

So the man himself doesn’t have a ton of personal info out there. But we do know that he came to Bled from Serbia. This move brought him into the heart of Slovenia’s lake country, where he had the chance to experiment with ingredients and techniques. 

How a Simple Cream Cake Recipe Became a Local Legend

Central Europe and the Balkan region honestly has an abundance of this cream delicacy. So why the spotlight on Bled’s cake? 

Firstly, it was the slight deviation from all the other “cremeschnitte” that Ištvan took in his own creation. The cream cakes that he was used to were mostly custard and pastry, but Ištvan clearly had ideas for something a little less heavy on the tummy. 

So he replaced half of the egg custard with a light and airy cream instead. That is what brought this perfectly balanced pastry to life. And within a couple of years, the cake went from being mentioned by word of mouth to being included in travel guides. 

Here’s an amazing fact: In the past 70+ years since its creation, Hotel Park’s cafe has served over 16 million of these scrumptious slices! That’s not even counting all of the wannabe dupes and replicas at other Bled cafes. 

What Makes the Original Bled Cream Cake So Specific

It’s actually the specificity of the cake that makes it so popular. The top and bottom of the pastry is made from crisp layers of puff pastry, and in between is a generous layer of custard, topped with fresh, fluffy cream. Then a light dusting of icing sugar to top it off. 

It sounds simple enough, but the exact amount of each ingredient is so important that if you were to stray even a little, you’d be left with something that tastes nothing like the original.

The size also plays a major role in just how detailed the cake gets. Every slice is exactly 7x7x7 cm. So there’s never a chance of getting the bigger slice, sorry! But according to the millions of mouths 

Why You Can’t Just Get the “Real One” Anywhere

The recipe for blejska kremšnita is actually a very well-kept secret. Perhaps even more guarded than KFC’s 11 herbs and spices. 

The dessert has had many try to replicate it, with plenty of bloggers promising to share their “Bled cream cake recipe”. But the truth is that no one else has the blueprint to make the dessert as soft, sweet, and as perfectly balanced as the original. 

The original cake can be found at Park Cafe on the Bled promenade, and you can enjoy every mouthful while looking out over Lake Bled.

What You’re Tasting in Every Bite of Blejska Kremšnita

I have plenty of reasons to visit Bled, but this cream slice definitely takes the cake!

More than a sweet treat to savour in between your sightseeing, this slice of sugary goodness is a piece of Bled’s history. It has become a mascot of sorts for the town, and a lasting memory of a man who once put his heart and craft into a simple dessert, and captured the love of so many people around the world. 

If you haven’t yet planned your trip to Bled, there’s really nothing left to wait for. Take a day trip, or book in for a longer stay, but just be sure to grab a table at Park Cafe and taste the original blejska kremšnita for yourself.
